Bourbon Chicken

Make the marinade into a gallon zip lock bag, this will hold about 10 to 12 pieces of chicken Also make a reserve marinade for basting

10- 12     chicken thighs , bone in  ,skin on
2  T       olive oil
2 T        Honey Spicey Mustard
2 T        Honey
1/4 Cup    Bourbon Whiskey  ( Jack Daniels is the best, it makes it a little sweeter)
2 T        red wine vinegar
2 T        Worcestershire sauce
2 T        Soy sauce
1/4 cup    brown sugar
2          garlic cloves, minced
Sea salt or Kosher salt
black pepper
 

Combine all ingredients and chicken in a gallon zip lock bag, drive 120 miles and run between 4 and 11 miles drink a GOOD beer and laugh with some great people. Remove chicken from bag and discard marinade. Cook over medium grill , basting frequently.after about 15-20 minutes I cook over indirect heat till I know the chicken is done and baste a lot. It glazes the skin nicely

Moxie’s Chicken Soup

4 pound chicken, cut-up 
1 onion, chopped
2 bay leaves
1 tbls parsley
1 tbls thyme
1 tsp black pepper
1 tsp course salt
3 leeks, white part only
4 celery stalks, cut up
5 small Yukon potatoes, cut into ˝” cubes
8 small carrots, cut up
1 apple sized turnip, cut into ˝” cubes
1 hand full of fresh parsley, finely chopped
  1. In a soup pot, add the rinsed chicken, onion, spices, salt. Cover with 1” of water. Bring to boil. Skim the surface if it needs it. Lower heat, cover pot and simmer for 20 minutes.
  2. Add the leeks, celery, potatoes, carrots, turnip and parsley. Simmer for about 30 minutes more, or until the vegetables are tender.
  3. Remove the chicken from the pot, discard the skin and bones, shred in bite size pieces and return to the pot. Skim the top, if the need be.

Winnipesaukee Burgers

2 lbs of lean ground beef
1/4 of a small onion, finely chopped
6 tbsp. catsup
2 tbsp. Worcestershire sauce
1 tsp. salt
1/2 tsp. black pepper
Couple of dashes of Tabasco sauce

Mix it all together in a big bowl. You can let in marinate in the fridge for a couple of hours, or just make up your patties and go for it. It makes 8 burgers.
